Project Overview
Food Monk collaborated with Better Batch to conceptualize and engineer a highly differentiated makhana (fox nut) product that went far beyond the conventional flavoured variants crowding the Indian snacking market.
The vision was bold: introduce a breakthrough clean-label, high-protein makhana snack tailored for modern fitness and health-conscious consumers, without resorting to artificial flavour enhancers, chemical preservatives, or unnecessary processing additives.
The Challenge
Overcoming Protein Textural Density & Coating Degradation
Traditional makhana naturally contains only about 7% protein by weight. Dramatically increasing the protein content to functional snack levels while preserving the product's signature airy, light crunch and delicate mouthfeel presented a formidable formulation obstacle.
In food science, heavy protein enrichment frequently causes severe negative side effects: chalky aftertastes, dense hardness, poor seasoning adhesion, and coating clumping. Balancing functional nutritional density with high sensory indulgence and consumer acceptance was the ultimate technical test.
Food Monk's Approach
Food Monk formulated a sophisticated, multi-stage enrichment strategy focused on seamlessly integrating clean protein sources onto the popped makhana matrix while rigorously upholding a clean-label ingredient declaration.
Our R&D team conducted extensive formulation trials to optimize protein carrier binding, thermal crisping parameters, and natural seasoning compatibility. By refining the coating rheology and surface adhesion, we eliminated protein dustiness and ensured uniform flavor distribution.
The result was an optimized formulation that achieved exceptional crunch, harmonious flavor balance, and outstanding nutritional density—proving that functional snacks can be just as delicious as conventional treats.
